Jan JureckaSundara’s head bartender has certainly shaken things up since his arrival. However, before launching anything major, he took his time to properly explore and dive the island. The result is a brand new cocktail menu inspired by the ‘personalities’ of Bali, featuring an extensive list of creative concoctions categorized to reflect the characteristics and produce of different regions.
This fun and interactive menu features six categories, mapped into an array of styles, including: ‘Bold & Adventurous’, ‘Botanical & Fruity’, ‘Natural & Nourishing’, and ‘Relaxed & Carefree’. For example, “Ubud Wellness Guru” features earthy, fresh, and fragrant concoctions inspired by the wholesome goodness of the area. The Sustainable Probiotic Mojito with fresh basil and fermented Bali tepache is one such drink with this personality. Under “Jimbaran Sustainability Warrior,” the drinks reflect the venue’s environmental efforts, such as the Mangrove Revival, a fruity-floral concoction that not only features mangrove blossoms, but each order funds the planting of new mangroves. It’s a truly original menu, and drinkers will enjoy choosing from categories from ‘Canggu Influencer’ to ‘Singaraja Connoisseur’. While complex and detailed, each drink is well balanced and tastes great.
Seen throughout the menu is the commitment to sustainability. Sundara is the first location in Bali to use ecoSPIRITS technology, which eliminates packaging waste from spirits; they follow a zero waste philosophy and recycle ingredients as much as possible. As an avid diver, climber, vegan and lover of the outdoors, sustainability is something the Slovakian mixologist has a vested interest in, evident in his creations.
